Potato Dumplings 7 Recipe

Ingredients
  • 3 cups potatoes, boiled, riced and cooled - Rice potatoes while hot
  • 2 cups flour
  • 1 teaspoon Salt
  • 2 Eggs
Directions
Add beaten eggs to potatoes, stir well. Add salt and flour and blend in. Form into balls (about size of small buns). Drop into boiling salted water. Boil for 15 minutes. Remove from water, using a slotted spoon. Roll around in a pan of melted grease or lard (so they won't be sticky). I put layer of sauerkraut over dumplings, sprinkled with caraway seed. Repeat with dumplings, a sauerkraut. These can be made and frozen till needed.
