Stuffed Zucchini 10 Recipe

  • 4 zucchini (parboiled)
  • 1/2 cup chive and onion cream cheese
  • 3/4 cup frozen corn
  • 1/2 cup chopped ham (I use sandwich meat)
  • 1/4 teaspoon ground black pepper
To parboil zucchini, cook in boiling water for 4-5 minutes. Drain and let cool. Cut length wise in half; and scoop out seeds. Combine remaining ingredients; spoon into shells. Broil in oven 6 inches from heat for 3-4 minutes until lightly brown.
