Zucchini Tomato Pie Recipe

  • 2 cups thinly sliced zucchini
  • 1 cup chopped tomato
  • 1/2 cup chopped onion
  • 1/3 cup grated Parmesan cheese
  • 1 1/2 cups milk
  • 3/4 cup Bisquick
  • 3 Eggs
  • 1/2 teaspoon Salt
  • 1/4 teaspoon pepper
Preheat oven to 400°. Grease a 10" pie dish and sprinkle the vegetables in the dish. Beat remaining ingredients until smooth (about 15 seconds in a blender). Then pour over vegetables. Bake approximately 30 minutes or until inserted knife comes out clean. Serves 4 to 6.
