Pasta and Spinach Recipe

  • 1 package pasta of your choice
  • 2 packages frozen chopped spinach (10 ounce pkgs)
  • 1/3 cup Extra Virgin Olive Oil
  • 1/4 cup balsamic vinegar
  • 4 ounces feta cheese, crumbled
  • 1/2 cup kalamata olives, cut lengthwise
Cook pasta according to package instruction, drain. Defrost frozen spinach, squeeze as much liquid out of it , add to warm cooked pasta and mix well. Add the rest of the ingredients, gently mix to combine, serve immediately.
