Hot Spinach Artichoke Dip 4 Recipe

Ingredients
1 - 16 ounce Frozen chopped Spinach, thawed, drained and squeezed dry
2 packages cream cheese, softened (8 ounce pkg)
1 - 8 ounce Jar Artichoke Hearts, chopped
1/2 cup mayo
1/2 cup sour cream
1 1/2 cups Shredded Parmesan or Asiago Cheese
1/3 cup Shredded Jack Cheese
3 green onions, chopped
2 garlic cloves, crushed
1/4 teaspoon ground red pepper
2 Tomatoes, seeded & chopped. (small)
Directions
Set aside 1/4 cup of parmesan and the tomatoes. Mix all other ingredients until well blended. Spread into a shallow baking dish. Bake about 30 minutes or until bubbling & slightly browned on top. Remove from oven & garnish with reserved Parmesan cheese and tomatoes. Serve with tortilla chips or crackers.
Note: this recipe also works well with low fat replacements for the Cream Cheese, Mayo & Sour Cream.
