Danish Potato Salad 4 Recipe

Ingredients
  • 1/4 cup vinegar
  • 1/4 cup water
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • dash pepper
  • 1 teaspoon mustard
  • 2 eggs beaten well
  • 1 cup salad dressing
  • 4 cups potatoes, cooked and cubed
  • 3 hard boiled eggs,chopped
  • 1/2 cup cucumber, chopped (or 2 tablespoon sweet relish)
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 cup celery, sliced
Directions
Combine vinegar, water, sugar, salt, pepper, and mustard. Bring to a boil; reduce heat and gradually beat in the eggs. Cook,stirring constantly until thickened. Beat in salad dressing. Toss together remaining ingredients and pour in dressing. Makes 6 servings.
