Oven Roasted Italian Vegetables Recipe

Ingredients
  • 1 1/2 cups baby-cut carrots
  • 1 1/2 cups fresh whole mushrooms
  • 2 onions, cut into 1 inch wedges (medium)
  • 1 red bell pepper, cut into 1 inch pieces (large)
  • 1 zucchini, cut lengthwise inch half, then cut crosswise into 1 inch slices (medium)
  • 3 red potatoes, cut into fourths (small)
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
Directions
Heat oven to 450 degrees. Generously spray 15x10x1-inch pan with cooking spray. In a large bowl, toss vegetables with dressing. Spread vegetables in single layer in pan. Add salt and pepper.

Bake uncovered 30 minutes, stirring occasionally, until crisp-tender. Makes 8 servings.
