Creamy Scalloped Potatoes 5 Recipe

  • 2 pounds potatoes (6 medium)
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 1 teaspoon Salt
  • 1/4 teaspoon pepper
  • 2 1/2 cups milk
  • 1 onion, finely chopped (1/4 cup) (small)
  • 1 tablespoon butter
Peel & slice potatoes thinly. Heat 3 T. butter in saucepan over low heat until melted. Blend in flour, salt & pepper. Cook over low heat until smooth and bubbly. Gradually stir in milk. Heat to boiling, stirring constantly. Boil & stir 1 minute. Arrange potatoes in greased 2-qt. casserole in 3 layers, topping each of the first 2 layers with half of the onion and 1/3 of white sauce. Top with remaining potatoes and sauce. Dot with 1 T. butter. Cook, covered in 350° oven for 30 minutes. Uncover and cook 1 hour longer. Let stand 5 to 10 minutes before serving. Makes 6 servings.
