Holiday Corn Casserole Recipe

Ingredients
  • 2 cans Creamed Corn
  • 2 Eggs, beaten
  • 3/4 cup yellow cornmeal
  • 3/4 tablespoon minced garlic
  • 1/4 cup cooking oil
  • 1 onion, chopped (large)
  • 1 jalapeno, chopped
  • 1/2 pound cheddar cheese, grated
  • 12 saltine crackers, crushed
  • 1 stick butter, melted
Directions
Mix together the first 8 ingredients. Place in a greased 3 qt. baking dish. Top with crushed crackers and pour melted butter over crackers. Bake, uncovered, at 400° for 35 to 40 minutes. Serves 8 to 10.
