BUTTERNUT SQUASH PARMESAN 2 Recipe

Ingredients
  • 1 butternut squash
  • 1/4 cup butter
  • 1/4 cup bread crumbs
  • 1/3 cup Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon vegetable seasoning
  • 1/2 teaspoon garlic powder
Directions
Slice squash in half. Remove seeds. Peel. Cut into 1/2-inch thick slices. Coat a 9x13 glass baking dish with nonstick cooking spray. Lay squash pieces slightly overlapping in dish. In a small saucepan, melt butter. Stir in seasonings. Remove from heat. In a small bowl, mix the bread crumbs and cheese and 1 T of the melted butter. Brush squash with melted butter, then sprinkle with crumb mixture. Bake at 375 degrees uncovered about 55 to 60 minutes or until tender.
