Chili Relleno Pie Recipe

  • 1/4 cup butter, melted
  • 1/2 cup onion, chopped
  • 4 cups long grain white rice, cooked
  • 2 cups sour cream
  • 1 cup small curd cottage cheese, creamed
  • 1 bay leaf, crumbled (large)
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 can can chopped green chilies (7 1/2 ounce can)
  • 2 cups grated sharp cheddar cheese
Mix sour cream, cottage cheese, 3/4 C. grated cheese, onion, chilies, and seasonings. Add mixture to cooked rice. Top with remaining cheese and 1/4 C. melted butter. Baked in lightly greased 9 x 13 x 2 casserole dish at 375° for 30-45 minutes. Serves 12 people.
