Fantastic dessert combining three complementary fruits. Serve it with a scoop of vanilla ice cream or a dollop of whipped cream.
Three Fruit Crisp Recipe (+)
Directions
Preheat oven to 375°F.
Peel and core all the fruit, and then slice into 1/2" pieces and put into the baking dish. Add the lemon juice to the fruit slices, tossing gently to coat.
Combine granulated sugar, cornstarch, and 1 tsp. cinnamon, and stir with a whisk. Add cornstarch mixture to sliced fruit, toss well to coat.
Lightly spoon flour and level with a knife. Place flour, 2 tsp. cinnamon, brown sugar, and salt in a food processor, and pulse just until combined. Then add chilled butter, and pulse until mixture resembles coarse meal. Add oats and walnuts, pulse 2 times. Finally, sprinkle the flour mixture evenly over sliced fruit.
Bake at 350° for 60 minutes or until fruit is tender and the topping is golden brown.
Cool 20 minutes on a wire rack. Serve warm or at room temperature. Great topped with ice cream. (You may use just one or the combination of all 3 fruits. Frozen peach slices may be used instead of fresh.)
