Irish Potato Puffs Recipe

Ingredients
  • 6 medium-sized potatoes
  • 4 eggs, unbeaten
  • salt, to taste
  • oil or shortening for frying
Directions
Boil potatoes, mash thoroughly and let cool.

When potatoes are cooled, add eggs and mix, salt to taste.

Drop this mixture by tablespoon into boiling deep fat and remove as puffs brown, do not cook too many at same time, for they will break.
