Roasted Vegetables 10 Recipe

  • 1 pound vegetables - green beans, yellow squash, zucchini, sweet onions, peppers or any type of fresh vegetable or vegetable mixture you prefer
  • 1 - 2 T oil
  • Sea salt
  • Pepper
Preheat oven to 425°. Slice vegetables (green beans can be left whole). Place vegetables on an aluminum foil-lined baking pan. Add salt and pepper to taste. Drizzle oil over vegetables. Place on middle rack of oven and roast for 10 minutes. Remove from oven, turn vegetables. Place back in oven and roast for another 10 - 15 minutes until done. Remove from oven and place in serving bowl. Add salt and pepper to taste. For a different variation, when vegetables are done, add a T of toasted sesame seeds or a handful of toasted walnuts or pecans.
