Couscous with Spring Vegetables Recipe

Ingredients
  • 1 box couscous (cook per directions)
  • 1 zucchini squash (shredded) (small)
  • 1 yellow squash (shredded) (small)
  • 2 carrots (shredded) (small)
  • 4 mushrooms (diced)
  • 2 cloves Garlic (minced)
  • 1 tablespoon olive oil
Directions
Steam zucchini, yellow squash, carrots, mushrooms in 1 tablespoon olive oil until tender crisp. Add garlic. Stir into prepared couscous. Heat briefly.
