Marshmallow Sweet Potatoes Recipe

With or without the marshmallows, this sweet potato dish is fabulous. Sweet and smooth, you might never want a regular mashed russets again.

  • 3 cups sweet potatoes, peeled, quartered
  • 2 tablespoons butter, melted
  • 2 tablespoons honey or brown sugar
  • 1 egg, well beaten
  • 3/4 teaspoon salt
  • 12 large marshmallows (optional)

Preheat oven to 350 degrees F. Butter a baking dish.

In a saucepan, boil sweet potatoes in water until fork tender; drain.

With electric mixer, beat potatoes with butter, honey/sugar, egg and salt.

When mixture is smooth, put in baking dish and top with marshmallows, if desired.

Bake in preheated 350 degrees oven until the tops of the marshmallows are golden brown.
