Pork And Bean Bake Recipe

  • 2 cups Great Northern beans or cannellini beans
  • Water to cover
  • 1 onion, chopped (large)
  • 2 cloves garlic, finely chopped
  • 3/4 pound lean ground pork
  • 3 medium-size cans of tomatoes, drained and chopped
  • 1/2 teaspoon pepper
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon Sage
In a large saucepan, soak beans overnight. In the morning, drain and replace beans in saucepan. Cover with fresh water and cook until tender. Meanwhile, in a large skillet, add a little oil and sauté onion and garlic until tender. Add ground pork and sauté until no longer pink. Stir in tomatoes, pepper, basil, oregano and sage; mix well and heat through. Spoon mixture into four individual baking dishes, or into a large casserole dish. Bake at 350° for 45 minutes or until bubbly hot.
