Healthy Vegetable Trio Recipe

  • 2 Zucchini (can also use one small yellow squash and one zucchini) (small)
  • 2 tomatoes (medium)
  • 1 onion (large)
  • 1/2 cup Shredded Cheddar Cheese (or half Cheddar, half Monterey Jack)
Slice all vegetables, layer in microwavable dish until all vegetables used. Cover, leaving small area open for steam to escape. Microwave on high for 8 minutes. Sprinkle shredded cheese on top and microwave for another 2 minutes. No seasonings needed and it's delicious!
