Put in saucepan and add 1 inch water and 1 teaspoon salt and boil 20-25 minutes.
Drain and cut potatoes crosswise in slices.
In large skillet fry bacon; drain on towels and crumble.
Pour off bacon fat except for 4 Tablespoons. Add onion and cook until tender.
Add parsley and potatoes. Shake pan back and forth until potatoes slices lie flat. Cook over medium heat for 20 minutes.
Loosen by slipping spatula under potatoes. Be careful not to break up potatoes. Put plate on skillet and tip potatoes on the plate.
