Easy & Quick Herbed New Potatoes Recipe

  • 2 pounds new potatoes (red potatoes)
  • 2 tablespoons water
  • 1/4 cup light butter, melted
  • 2 tablespoons fresh parsley, minced and divided
  • 1 tablespoon fresh basil, minced
Prick each potato with a fork and place in 13x9 baking dish (microwave safe). Add water, cover with plastic wrap and microwave on high for 10-12 minutes or until tender. Drain water, set aside. Combine butter, 1 Tbsp parsley, and basil together in small mixing bowl; pour over potatoes, tossing lightly to coat. Sprinkle with remaining parsley and serve.
