Harvard Beets Recipe

Ingredients
  • 4 cups cooked diced beets
  • 1 cup mild vinegar
  • 2/3 cup sugar
  • 1/4 cup flour
  • 1 teaspoon Salt
  • 4 tablespoons butter
  • 1/2 cup water or beet juice
Directions
Mix sugar and flour together in saucepan. Add water and vinegar. Cook until thick, stirring constantly. Add butter, salt, diced beets. Cook until beets are thoroughly heated.
