Potato Pancakes (Latkes) Recipe

  • 4 red potatoes, grated (large)
  • 1 onion, grated
  • 3 or 4 eggs
  • vegetable oil
  • 1/3 cup flour or matzo meal
  • salt & pepper
  • 1 teaspoon baking powder
Grate potatoes in food processor. Rinse well in colander under cold water to remove starch. Remove excess water by squeezing potatoes in colander. Grate onion in food processor. Mix potatoes and onion in large bowl. Add eggs, flour, and baking powder and mix well. Season to taste with salt and pepper. Heat oil in large skillet or electric fry pan. Drop mixture by spoonful. When well browned, turn and flatten with spatula to make thin pancake. Brown other side. Turn again until pancakes are crisp and brown. Drain on paper towels. Serve immediately with applesauce or sour cream.
