Cooking Light Sweet Potatoe Casserole Recipe

Ingredients
  • 2 1/4 pounds sweet potatoes, peeled and chopped
  • 1 cup half & half
  • 3/4 cup brown sugar
  • 1 teaspoon Salt
  • 2 teaspoons Vanilla
  • 2 Eggs
Directions
Boil the sweet potatoes till tender. Mash potatoes and add rest of ingredients. Mix well and pour into greased 9x13 pan. Bake about 30 minutes at 375.
