Roasted Vegetables 6 Recipe

  • 2 Potatoes, peeled and cut 1/2 inch squares (Medium)
  • 2 Carrots, 1/2 inch slices (Medium)
  • 1 Zucchini, 1/2 inch slices (Large)
  • 1 Sweet Pepper, 1 inch pieces (Large)
  • 1 tablespoon olive oil
  • 1 teaspoon Dried Basil and Oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, minced
In large bowl, combine potatoes, carrots, zucchini and red pepper. Combine remaining ingredients and drizzle over veggies. Stir to coat. Transfer to an ungreased 13" x 9" baking dish. Bake uncovered 375° for 30-35 minutes.
