  • 2 cups mashed potatoes
  • 2 sggs
  • 4 tablespoons self-rising flour
  • Salt and Pepper to taste
  • 2 tablespoons butter

Beat mashed potatoes and eggs until smooth.

Add flour, salt and pepper. Stir to a batter.

Heat a skillet over medium-high heat with butter. Drop batter by heaping spoonfuls and flatten slightly. Brown on both sides.
