Roasted Vegetables 4 Recipe

  • 6 red potatoes, washed and cubed
  • 1 red onions, quartered and separated
  • 4 yellow squash, sliced (1/2 inch thick)
  • 3 zucchini, sliced (1/2 inch thick)
  • 1 red bell pepper, sliced
  • 1/4 cup olive oil
  • 2 tablespoons cajun seasoning (more or less to taste)
  • 3 cloves garlic, chopped
  • 1 tablespoon Dried Parsley
Preheat oven to 425. Combine prepared vegetables in a large bowl. Mix olive oil, cajun seasoning, parsley and garlic cloves and pour over vegetable mix tossing to coat vegetables evenly. (You may have to use 2 bowls to mix it all.) Grease a large roaster and pour the veggies in the roasting pan. Cook for about 40 minutes (stirring every 10 minutes) or until potatoes are done.
