Cheesy Vegetable Casserole 2 Recipe

  • 2 packages frozen California Vegetables (Broccoli, Cauliflower, Carrots) (12 ounce pkg)
  • 1 pound Velveeta Cheese, cubed (1/4 container)
  • 1 stick butter or margarine; divided
  • 1 row Ritz Crackers
Cook vegetables in microwave according to package directions. Place in 3 Qt. casserole dish. Melt together cheese and 1/2 stick butter in microwave. Mix well. Pour over vegetables in casserole dish. Melt other 1/2 stick of butter in microwave. Crush Ritz crackers in blender. Mix crackers and butter together and sprinkle crumbs over cheesy vegetables. Bake at 350° for 35 to 40 min. uncovered.
