Vegetable Bundles 2 Recipe

  • 4 18"x12") pieces of heavy-duty aluminum foil
  • vegetable cooking spray
  • 2 yellow squash, sliced (medium)
  • 1 onion, cut into 4 slices (large)
  • 1 tomato, cut into 4 slices (large)
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons grated parmesan cheese
Coat aluminum foil with cooking spray. Place squash evenly in center of each; top with onion and tomato slices. Combine vinegar, mustard, salt and pepper; drizzle evenly over vegetable bundles. Sprinkle evenly with cheese and seal securely. Bake on baking sheet at 400° for 20 minutes or until vegetables are tender.
