Lunch Vegetable Pancakes Recipe

Ingredients
  • 1 cup carrots (grated)
  • 1 cup zucchini (grated)
  • 1/4 cup milk
  • 1 egg
  • 2 green onions
  • 1/2 cup flour (I use spelt- a high protein wheat)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon to 1/2 teaspoon garlic powder
Directions
Mix together milk, egg, onions, flour, baking powder, salt, and garlic powder. Fold in veggies. Drop by spoonfuls in oiled skillet. Serve with butter, cream cheese, or sour cream.
