Ingredients
8 red potatoes
1/2 onion, finely chopped (small)
1/2 teaspoon Salt
2 1/2 tablespoons butter
2 1/2 tablespoons flour
2 1/2 cups milk
2 - 2 1/2 cup shredded sharp cheddar cheese
5 slices bacon
1/4 - 1/2 teaspoon garlic powder
Directions
Slice potatoes to 1/4 in thickness. butter a large casserole dish and layer half of potato slices on bottom of pan. Sprinkle half of the garlic powder over the potatoes then top with half of the onion and half of the crumbled bacon. Add the rest of the potato slices and top with remaining garlic power, onion, and bacon. Season with salt and pepper to taste. Set aside. In saucepan, melt butter over medium heat. Mix in flour and 1/2 tsp. salt stirring constantly for one minute. Stir in milk and cook until thickened. Stir in cheese all at once and stir until melted Pour cheese over potatoes. cover with non-stick foil and bake at 400° for 1 1/2 hrs.
