Carrot Soufflé 5 Recipe

  • 1 pound carrots
  • 3 eggs, lightly beaten (large)
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
Cook carrots until tender and allow to cool completely. When cool, process in a blender until smooth. Add remaining ingredients and stir. Pour into a 1 qt. baking dish and bake at 350 degrees for 45 minutes. So yummy and very sweet! Kids will love it!
