Spinach Soufflé 6 Recipe

Ingredients
  • 1 package frozen chopped spinach, thawed (10 oz pkg)
  • 2 tablespoons butter
  • 1 onion, chopped (medium)
  • 2 cloves garlic, minced
  • 3 eggs (large)
  • 2 tablespoons flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon pepper
  • 1 cup milk
  • 1 cup grated Parmesan or Romano cheese
Directions
Drain spinach well. Melt butter over medium heat; add onion and garlic, and sauté 5 minutes until lightly browned and tender. Remove from heat, stir in spinach; cool. Whisk together eggs and next 4 ingredients. Whisk in milk and cheese; stir into spinach mixture, and pour into a lightly greased 8 inch square baking dish. Bake at 350° for 35 minutes or until set.
