Slow Cooker Baked Beans Recipe

  • 6 slices Canadian bacon or ham, diced
  • 1 onion, chopped (large)
  • 1 red bell pepper, chopped (large)
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 2 -15 1/2 ounce cans cannellini (or any white) beans, rinsed and drained
  • 1 can pinto or red-kidney beans, rinsed and drained (19 1/2 ounce can)
  • 1 can black beans, rinsed and drained (15 1/2 ounce can)
  • 1 can tomatoes with green chilies (14 1/2 ounce can)
  • 1 can tomato sauce (8 ounce can)
  • 1 can chicken broth for extra juice, if wanted (12 ounce can)
Add all ingredients to the slow cooker and stir. Cover and cook on low setting 7-8 hours or 3-4 hrs on high setting. Serve with cornbread.
