Stuffed Cucumbers 4 Recipe

  • 2 cucumbers
  • 1 package cream cheese (8 ounce pkg)
  • 3 tablespoons onion, finely chopped
  • 1/2 teaspoon paprika
  • Salt
  • Pepper
  • Chopped parsley
Cut cucumbers into 1-1/2 inch segments. Peel half of the outside skin in stripes. Hollow out the center of the sections about 2/3 of the way through, leaving the bottom intact. Whip the cream cheese until soft. Add the onions, paprika, salt and pepper. Mix well. Form into small balls and roll in chopped parsley. Place one ball in each cucumber hollow. Serve very cold. Serves 6.
