Bring cream to a simmer. Add salt and pepper. Stir well. Add the potatoes. Lower heat to medium-low and simmer until potatoes are barely fork tender (10-12 minutes) Remove from heat.
Transfer 1/3 of potatoes to baking dish. Top with 1/3 of cheese. Layer remaining-ending in cheese.
Bake 30 minutes or until golden brown and bubbly.
