Red Potatoes Recipe

Ingredients
  • 3 pounds red potatoes
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 teaspoon pepper
  • 1 tablespoon Greek oregano
  • 1 teaspoon Salt
  • 1 cup water (add when potatoes have baked 25 minutes)
Directions
Wash and cut red potatoes into medium pieces. Arrange the pieces on a cookie sheet. Mix olive oil, lemon juice, pepper, oregano and salt.

Pour this mixture over the potatoes. Preheat oven to 500, bake 50 minutes. Turn potatoes over and add water after 25 minutes.
