LEFT OVER MAGIC CORN Recipe

Ingredients
  • 1 pouch (6.5 ounce cornbread mix
  • 1 1/2 cups corn
  • 1 egg (large)
  • 1/2 cup Milk
Directions
Mix all ingredients and let stand 5 minutes.

Heat vegetable oil in a pan and drop heaping Tbsp of batter into hot oil; cook 1 to 1 1/2 minutes on each side. flatten with spatula after turning.

Serve warm or at room temperature with a drizzle of honey or maple syrup.
