Pepper Corn Recipe

  • 2 tablespoons butter
  • 4 green onions, chopped OR regular onion
  • 1/2 - 1 green pepper, chopped
  • 1/2 - 1 red pepper, chopped
  • 1 can corn kernels, drained OR 19 ounce frozen corn (19 ounce can)
  • 1/4 cup cream
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 1/2 cup grated cheddar cheese, optional
  • 1/2 teaspoon to 1 T. chopped parsley
Melt butter in skillet. Add onions, peppers and corn kernels. Cook 2 minutes. Remove from heat. Add cream. Season with salt and pepper. Pour into a 2 qt. shallow baking dish. Combine cheese and parsley. Sprinkle over top. Cover and bake at 350° for 15 to 20 minutes or till heated through.
