Anytime Scrambled Eggs Recipe

  • 4 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • Dash of pepper
  • 1/4 cup shredded cheese, crumbled cooked bacon, chopped fresh chives, sliced green onions or chopped canned mushrooms
Beat eggs, milk, salt and pepper in 1-quart casserole, using fork. Stir in Cheese.

Cover tightly and microwave on high 3 to 4 minutes, stirring every minute, until Eggs are puffy and set but still moist. Stir before serving.

2 servings; 175 calories per serving

Microwave time: 3 to 4 minutes

Note: Recipe can be doubled. Increase microwave time to 6 to 8 minutes, stirring every 2 minutes.
