White Rice Pilaf Recipe

  • 1 1/2 tablespoons olive oil
  • 1 1/2 cups white rice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 3/4 cups chicken broth
  • Salt to taste
  • 3 teaspoons coarsely chopped flat leaf parsley
Preheat oven to 350 with rack in middle. In a 3-quart oven-safe saucepan, add oil, rice and onion. Cook until rice is milky white (5 minutes). Add garlic and stir until fragrant; add chicken broth and bring to a full boil. Cover and place in oven and bake for 25 minutes. Stir halfway through. Remove from oven; uncover and let stand 5 minutes. Fluff with fork and add parsley.
