Garden Fresh Squash Casserole Recipe

  • 2 1/2 pounds fresh cubed squash, cooked and drained well
  • 1 onion, chopped (large)
  • 1 egg (large)
  • 2 cups grated American cheese
  • 2 green bell pepper, chopped fine (medium)
  • 2 tablespoons mayonnaise (heaping)
  • salt & pepper to taste
In an oblong covered glass microwave dish, mix squash, peppers, onion, mayonnaise and egg. Add one cup of the cheese and salt & pepper to taste. Mix again. Smooth out evenly. Top with remaining cheese. Microwave directions: cook 15-18 minutes (or until cheese just starts to turn brown on edges) on high. Serve while hot. Yield: 6 to 10 servings.
