Vegetable Casserole 4 Recipe

  • 1 cup Long Grain Rice
  • 2 tablespoons butter (or margarine)
  • 1/2 cup chopped onion
  • 1 cup chopped carrots
  • 2 cups broccoli flowerets
  • 1 chopped bell pepper (medium)
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1 tablespoon chopped parsley
  • dash of salt & pepper
  • 1 cup grated cheese
On stove top sauté onions in butter until soft. Add carrots and cook on medium heat for about 3 minutes. Add broccoli, bell pepper, garlic and rice. Add chicken broth and bring to a broil. Cover and cook on low to medium heat for about 20 minutes or until rice is done. Add parsley, salt and pepper. With a fork toss in the cheese. Place in casserole dish and broil at 350° for about 10 minutes or until top is slightly brown.
