Zucchini Hot Dish 2 Recipe

  • 3 zucchini, thinly sliced (medium)
  • 1 1/2 pounds ground beef, browned
  • 1 package Stuffing Mix (6 ounce pkg)
  • 1 can cream of chicken soup
  • 1 onion, chopped (large)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 cup carrots, grated
  • 1 cup sour cream
Cook zucchini and onion in small amount of boiling water for 5 minutes, then drain. Prepare stuffing according to package directions. Spread the browned meat in a greased casserole dish. Top with 1/2 the stuffing. Combine the carrots and sour cream. Fold in the squash and onions. Pour over the stuffing. Add remaining meat. Top with the rest of the stuffing mix. Bake at 350° for 45 minutes.
