Blue Cheese Crisps 2 Recipe

  • 1 3/4 cups flour
  • 1 tablespoon black pepper
  • 8 ounces blue cheese at room temperature
  • 1 stick unsalted butter (4 ounce stick)
  • 1 egg
Cream cheese and butter until light. Add egg and mix well. Add flour and pepper. Mix quickly but thoroughly. Shape dough into 2 logs, wrap in waxed paper or saran wrap and refrigerate overnight. Slice into 1/8" rounds and bake on ungreased cookie sheet for 10-15 minutes at 375°.
