Tortilla Soup (Crock Pot) Recipe

  • 2 chicken breasts, chopped into 1 inch pieces
  • 1 clove garlic, minced
  • 4 cups chicken broth
  • 4 cups chopped tomatoes
  • 1 cup salsa
  • 1/2 cup fresh cilantro, chopped
  • 2 cups corn
  • 1 ounce can black beans
  • 1 tablespoon Cumin
  • 8 ounces cheddar cheese
  • Sour cream
  • Tortilla chips
Place chicken, garlic, broth, tomatoes, salsa, cilantro, corn, beans and cumin in crock pot. Cover and cook on low for 8 to 10 hours. Ladle soup over cheese in bowls and top with sour cream and tortilla chips. Serves 6 to 8.
