SUMMER SALAD WITH LEMON VINAIGRETTE 2 Recipe

Ingredients
  • DRESSING:
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Lemon Peel
  • 1 teaspoon Dijon mustard
  • 1/2 cup plain yogurt
  • 1/2 teaspoon pepper
  • SALAD
  • 2 packages torn, mixed salad greens (5 1/2 ounce pkgs)
  • 1 red onion, thinly sliced (medium)
  • 2 cups sliced fresh mushrooms
  • 2 cups fresh raspberries
  • 1 cup chopped walnuts
Directions
In a blender, mix dressing ingredients. Refrigerate until serving. In a salad bowl, combine the salad ingredients. Drizzle with dressing and toss to coat. Serve immediately.
