BEEF AND BARLEY SOUP 7 Recipe

Ingredients
  • 1 pound boneless, lean top round steak, trimmed of all visible fat and cut into 1 inch chunks
  • 1 - 2 bay leaves
  • 2 onions, chopped
  • 7 cups water
  • 3 carrots, chopped
  • 3 celery stalks, chopped,
  • 3/4 cup pearl barley (I use quick barley)
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
Directions
Combine beef, bay leaves, onions and water in a large pot. Bring to a boil. Skim off foam. Add carrots, celery, barley, salt and pepper; return to boil. Reduce heat and simmer, covered, 45 minutes.
