Butternut Squash Chili Recipe

  • 1 pound Ground Beef
  • 1 onion chopped (medium)
  • 2 cloves minced garlic
  • 2 cans stewed tomatoes (14.5 ounce)
  • 2 cans kidney beans
  • 2 cups cubed butternut squash
  • 1 cup beef broth
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons Chili Powder
  • 1 cup frozen corn
Brown together ground beef, onion and garlic.

Add tomatoes, beans, squash, broth, cumin and chili powder.

Bring to a boil.

Cover and reduce heat to simmer for 15 minutes.

Stir in corn.

Cook uncovered 15 minutes until squash is tender and chili has thickened.
