Everyday Egg Salad Recipe

Ingredients
  • 9 hard-boiled eggs, peeled and chopped into big chunks
  • 1/4 cup plus 2 tablespoon mayonnaise
  • 1 1/2 teaspoons Dijon mustard
  • 3/4 teaspoon yellow mustard
  • 2 tablespoons lemon juice (or 3/4 of a fresh squeezed lemon)
  • 1/4 cup green onions, optional
  • salt and pepper to taste
Directions
Stir together the mayo, Dijon mustard, yellow mustard, lemon juice, and green onions. Mix eggs gently into the dressing. Season with salt and pepper. Serve on your favorite bread. 6 servings
