Loaded Potato Soup Slow Cooker Recipe

Ingredients
  • 4 pounds new potatoes peeled and cut up
  • 1 onion chopped (small)
  • 2 cans chicken broth (14 oz cans)
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 pint half and half
Directions
In slow cooker layer potatoes and onions. Add salt and pepper. Pour broth on top. It will not cover all potatoes. Cover and cook on high 6-8 hours or low 4-6 hours. Cook until tender. Add half and half. Cover and cook on high 20 minutes longer. Top with crumbled bacon, cheese and green onions.
